Ambient smoked sausage is a type of smoked sausage that does not require refrigeration because it is pasteurized. This offers several advantages, including flexible placement options, a long shelf life and a relatively low risk of spoilage. The unrefrigerated smoked sausage has a full flavor and is often used in Dutch dishes such as stamppot and pea soup.
There are several ways to make smoked sausage:
1. Smoked sausage that has been acidified through the fermentation process. This contains the classic, old-fashioned, more sour flavour. This is the traditional smoked sausage that used to be very popular.
2. Fresh smoked sausage acidified with citric acid. This variety has a less sour taste than the fermented smoked sausage. Over the years, this smoked sausage has become more popular.
3. Coextruded smoked sausage which is not made in the traditional way, with a sausage skin, but with a collagen layer using the coextrusion method. This sausage can be kept at room temperature outside the fridge.

Coextrusion is a process in which different raw materials are combined into a final product. The process starts by mixing two or more different raw materials in a mixer, which are then fed into an extruder. The extruder kneads and heats the ingredients into dough and then melts and mixes them. The mixture is then deformed into a hot dog using a collagen layer. During the coextrusion process, the product is pasteurised and vacuum-packed so that it can be stored for longer periods outside refrigeration.
Our in-line production produces numerous smoked sausages in different shapes and sizes, including chicken, pork and beef, as well as organic, low fat or extra juicy! Moreover, several flavour variations are available.
