In terms of flavour, this product is very similar to regular cervelate. The difference is that Alsace cervelate contains different spices and usually has a larger calibre.

Alsace cervelat is a type of dry sausage and originates from the former German, later French, region of Alsace. Alsatian cervelate is made from both pork and beef.

Alsace cervelat has a characteristically large calibre, with a fine cut.

It is both possible to buy our Alsace cervelat in cut slices and in bulk. Various calibres are possible.
