It is a product eaten almost everywhere in the world and produced in countless varieties.Generally, ham has a pure meat flavour of its own and uses fairly neutral additives. After salting and seasoning, products in this group are normally cooked at a temperature of around 80⁰C.
The characteristic colour and flavour of baked ham are caused by the maillard reaction during the production process. During frying at high temperatures, the meat turns brown in colour as a chemical reaction takes place between reducing sugars and amino acids.
At Compaxo, we mainly use hind ham as the basis for our baked ham.
After selection, we add a stock that is massaged into the meat to optimise its saturation. Finally, the meat is heavily smoked for a deep smoky flavour.

It is possible to buy our baked ham in slices, cubes, strips and in bulk.
